1.  SMOKED WHOLE SUCKLING PIG SANDWICH BAR
Whole suckling pig smoked with hickory maple chips and slow cooked presented whole in front of guests eyes and served on fresh mini kaiser buns with selection of homemade:

2.  FISH TACO STATION
Fresh halibut pan fried and served on mini tortilla wraps accompanied by a sweet and sour coleslaw and fresh mango, papaya, tomato and cilantro salsa.
Served with fresh lime wedges and sweet potato parsnip frits.

3.  MACARONI CHEESE BAR
Macaroni served in a light smoked Gouda cheese sauce topped with a citrus and herb panko topping. Served in individual mini ramekins for guest to enjoy.

5.  SUSHI STATION
Variety of sushi rolls and cut fresh by our chefs includes vegetarian, seafood & California rolls. Served with soy sauce, wasabi & pickled ginger.

6.  CHICKEN & BEFF SATAY STATION
Selection of chicken tender skewers marinade in ginger, garlic, cilantro & fresh lime.
Beef striploin skewers marinade in lemongrass, kaffir lime, fresh chillies, palm sugar & tamarind.
Grilled to perfection and presented on banana leaf platters with our homemade peanut satay sauce.

7.  OYSTER & GUINESS STATION
PEI Malpeque oyster shucked fresh by our chefs and presented on crushed ice.
Condiments include fresh lemon wedges and variety of flavored sea salts
Oysters will be accompanied by shots of Guinness presented in mini shot glasses.

8.  RISOTTO BAR STATION
Risotto made fresh before guest eyes by our chefs and presented in a martini glass with a variety of toppings for guests to add and enjoy.

9.  PASTA BAR (Penne La Vodka Station)
Penne pasta cooked AL Dente & prepared before guests.
Penne is sautéed with onions, garlic and pancetta, flamed with vodka & finished with fresh tomatoes, basil & cream. Served on glass plates for guests to enjoy.
Accompanied by fresh parmesan, cracked black pepper and fresh basil.

10.  PAD THAI SATION (VEGETARIAN)
Rice noodles sautéed in a wok with julienne carrots, bean sprouts, cilantro, pickled radish, tofu, spring onions, & our own homemade pad Thai sauce. Accompanied by crushed peanuts, coriander petals and fresh lime wedges. Served in Chinese takeout boxes with choice of fork or chopstick.

10.  PAD THAI SATION (VEGETARIAN)

14.  SEAFOOD CEVICHE STATION
Fresh Atlantic salmon slices prepared ceviche style and topped with mango, tomato, cilantro and avocado salsa. Served on crushed ice in a mini glass martini glass & garnished with edible flower petals.

Homemade crepes flambéed in brandy and filled with a selection of peaches and fresh berries. Served with vanilla ice cream.
